For the Lobster Medallions:

  • Twin lobster tails, split in half and cleaned
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (for garnish)

For the Lemon Garlic Butter Sauce:

  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste

1_Prepare the Lobster Medallions:

  • Using kitchen shears, cut through the top of each lobster tail shell and remove the meat. Cut the lobster meat into medallions, about 1-inch thick.
  • Season the lobster medallions with salt and pepper.

2_Cook the Lobster Medallions:

  • Heat olive oil in a large skillet over medium-high heat.
  • Add minced garlic and sauté for about 1 minute until fragrant.
  • Add the lobster medallions to the skillet. Cook for 2-3 minutes on each side or until they turn opaque and slightly browned.
  • Remove the lobster medallions from the skillet and set them aside on a plate.

3_Make the Lemon Garlic Butter Sauce:

  • In the same skillet, melt the butter over medium heat.

  • Arrange the cooked lobster medallions on a serving plate.
